Iced Tea Recipes
Apple and Honey Iced Tea
4-5 teaspoons tea (we suggest Keemun Panda, Lover’s Leap, or Herbals which are great for kids!)
1/3 cup honey (more or less according to your taste)
3 cups apple juice (try cider; experiment!)
Steep tea according to directions. Strain tea, stir in honey and juice until honey is dissolved. Chill and serve over ice. Serves 6-8
Ginger Iced Tea
1-inch piece of fresh ginger
Sugar (or some other sweetener) to taste.
Slice ginger root into thin slices and crush. Heat 1 quart of water and let tea steep with the ginger over low heat for at least 10 minutes. Strain out tea and ginger and add sugar. Let cool and serve over ice.
Sparkling Jasmine Iced Tea
4 cups very hot water, but not boiling (180 degrees)
3 tablespoons Jasmine with Flowers tea
1 cup brown sugar
1 1/4 cups sparkling water
Dissolve sugar in 3/4 cup of water, and boil gently until a syrup has formed. Set aside and let cool. Steep the Jasmine tea in the remaining 3 cups of hot water for around 6 minutes. Strain out tea and let cool slightly. In a pitcher, combine syrup and tea. Stir or whisk until fully blended. Add sparkling water and cool thoroughly. Serve over ice. Can be served with cinnamon sticks, lemon slices or mint sprigs. Makes 1 quart of iced tea.
Iced Tea for Chai Lovers
8-10 teaspoons of unflavored black tea (Keemun Panda, Lover’s Leap, or Tarajulie)
1 cup evaporated milk
4 tablespoons of sugar
4 teaspoons each of cinnamon and cardamom
Ice, crushed
Boil the water and steep the ta with cardmom for 5 minutes. Strain out tea and let cool. Put ice into 4 glasses and add tea. Leave about a quarter of the glass empty. To each glass add 1 tsp. sugar, 1 tsp cinnamon and 1/4 cup of milk. Serves 4t
Another variation of Chai Iced Tea
4 cups of water
12 whole cloves
12 allspice berries
12-inch cinnamon stick
Lemon wedges
Pour water into a saucepan and bring to a simmer with tea, cloves, allspice and cinnamon. Steep the mix for 5 minutes. Strain out all the spices and tea leaves, and then put in the fridge to chill thoroughly. Serve this spiced iced tea with lemon wedges, over ice.
